Recipe: Strawberry Breakfast Bake
This subtly sweet warm breakfast is good for gut health and can be made without grain.
Strawberry Breakfast Bake
Serves 2
Time: 35 minutes
This strawberry granola bake tastes great on its own, or you can use it to top yogurt or smoothie bowls. It is subtly sweet without excess sugar and contains your daily dose of fiber and plenty of manganese to help you stay awake and alert in the mornings. For grain free variations, see the recipe notes.
1 pint strawberries
2 cups old-fashioned oats
1 cup nonfat or low-fat dairy milk or unsweetened plant-based milk
1 egg (or 1/2 cup applesauce)
1 ripe banana, mashed
1/4 cup sliced almonds
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon maple syrup (optional, 1 teaspoon max)
1 teaspoon sea salt
Preheat oven to 350°F and grease a medium baking pan.
Slice the strawberries into quarters or thin slices. Set aside half the strawberries.
Combine the other half of the strawberries and the rest of the ingredients in a bowl and then pour the mixture into the pan.
Bake 30 minutes or until cooked through.
Top with the remaining sliced strawberries. Serve warm.
Recipe Notes:
Gluten-free variation: Use certified gluten-free oats.
Grain-free variation: In place of the oatmeal, increase the sliced almonds to 1/2 cup and add 1 additional egg. Also add 1 cup shredded apple and/or shredded sweet potato.
